How to Run a Blind Taste Test: A Guide for Food Brands

Brand names, packaging and price all influence what people think they taste. A blind taste test removes those influences, so you learn how your product performs on taste alone. ARS has conducted blind taste tests for food brands, including AM Noodles.

When to use a blind taste test

  • Choosing between two or more new recipes
  • Checking whether a cost-saving ingredient change is noticed
  • Comparing your product with the market leader
  • Testing regional taste preferences before entering a new state

Six steps to a reliable test

1. Recruit the right tasters

Tasters should be regular users of the category and match your target customers by age, region and household type.

2. Hide the identity

Serve every product in identical plain containers, labelled only with random three-digit codes.

3. Prepare consistently

Cook or serve each product the same way, at the same temperature and in the same quantity.

4. Rotate the order

The first sample often scores differently, so change the serving order across tasters and offer water between samples.

5. Ask clear questions

Rate overall liking, taste, aroma, texture, spice level and appearance on simple scales, then ask which product they prefer and why.

6. Analyse by segment

Look beyond the overall winner: children, adults and different regions often prefer different profiles.
